In October 2018, the new Hackberry Market at the intersection of East Houston and Hackberry streets had six tenants lined up, five of them food and beverage related. The only one that had not opened since then was vegan bakery and cafe Cake Thieves Bakery & Eatery.
That changed on Tuesday when the bakery opened its doors for the first time, joining Truth Pizzeria, Black Laboratory Brewing, The Farmers Butcher, The Magpie restaurant and a Credit Human branch.
Clearly, San Antonio was excited for the opening, and Cake Thieves sold out of all its inventory on the debut day.
“It’s been a long process, but the only way I can describe getting to finally open is gratefulness,” said co-owner Sam Martinez. Martinez works the front of house, and fellow co-owner Kia Geronimo is the executive pastry chef.
Inside customers will find a well-lit environment with natural sunlight, plenty of seating with a full view of the bustling kitchen and a display case loaded with cookies, muffins, kolaches, tricked-out doughnuts, croissants, cinnamon rolls and more. Everything is vegan.
Cake Thieves also serves coffee with a house blend and espresso options, and customers can special order cakes.
Within a few weeks, Martinez said the eatery part of the name will come into play with vegan lunch options that will include chik’n sandwiches, “egg” and “tuna” salad sandwiches and more.
