If you save your veggie peels and onion, garlic and pumpkin skin in the freezer until you have enough, you can boil with a lot of water to make veggie stock for free. I freeze mine in one cup containers for pre-measuring

That Breville slow go cooker looks great! Recently I have been doing curries in my rice cooker and I am surprised at how versatile that type of cooking pot can be.

It's really good to see a vegan meal prep from someone in Australia, you don't see that too often but it's great to see brands that you know from a familiar supermarket as well. š The oats in the jar for breakfast is called overnight oats. Really good with some chia seeds for added nutrition and to help thicken it up as well. Even flaxseed works too and is more affordable, just 3/4 tsp will do.

I love low cost food challenges but thereās not many vegan Aussie ones. Thank you for doing a realistic one!
On a side note I regrow my spring onions because theyāre always the one thing I forget at the shops. If you save the bottom 3rd including roots and pop them in a glass of water theyāll regrow fairly quickly. Keep them on the window sill or plant in the garden. Parsley, mint, chives and rosemary thrive all year round in most of Vic (garden or pots) if you have the space saves a bit of money if buying $3 bunches regularly from the shops

Have you tried the Biscoff spread? I think it could work pretty good as a sweetener in your oats.
