You should save a mug of the pasta water in case you want to add it in while cooking. Also onions and lentils would make a great addition to this. Also use a deep pot for cooking pasta and salt it very well
This is third time I making this , I love it , but this time I forgot I had no cashews , so I used pecans , worked great , added my own home grown broccoli sprouts on top and some small red beans and chick peas.
Has some nice champagne on the side too ( smile )
PS I always throw in the oven some hot red Fresno peppers , take away the need to add any salt !

I just cooked this for myself for dinner. It was amazing!! I didn't have any fresh cauliflower, so I used about two cups of frozen riced cauliflower I had and thawed it out on the counter while I prepared the other ingredients. I also used the toaster over to roast my red peppers so my bigger oven wouldn't heat up my whole apartment. It's 90 degrees here today where I live! βοΈ Thanks for the easy, delicious recipe, Rose! π
