I'm from down South. You top greens with vinegar & hot sauce or opt for chow chow topping.
Favorite comfort food is garlic mashed potatoes (sometimes with rosemary), and also stuffing, and hey why not add some vegan gravy. Right now acorn and butternut squash is cooking with some stuffing in the middle. Squash soup will happen as well. yums

My favorite old-school soul-food comfort food is cornbread stuffing. I've tried making cornbread stuffing since going vegan, but it doesn't seem the same without the butter and sausage.
This collard greens recipe sounds absolutely yummy. I love the added sweetness of the sugar and molasses (really helps to cut the potential bitterness of the greens.) When I think of comfort food, I think of chicken and dumplings or homemade chicken noodle soup. Can you whip up a soulful vegan version of either of these? 🙂
Hi Jason, I was raised on collard green and cornbread. This recipes looks delicious. I will definitely try it. However, I have tried every vegan option for making cornbread and just can't get it to taste like old fashion, southern cornbread. Cornbread is suppose to be crispy on the outside with a light, crumbly inside. Every time I use an egg substitute or a vegan milk options, the cornbread turn out heavy. Do you have a miracle recipe that will produce vegan cornbread that taste like it comes straight from the south?
