… but as a Japanese Canadian I had to make a comment about your 'okonomiyaki'. Okonomiyaki is literally 'okonomi' – as you like it/your preference and 'yaki' – fry. So on a cabbage batter base, you put toppings of your choice which then all gets flipped and fried together. For us vegans we could put veggie ground that has been seasoned with soy sauce, ginger, garlic mirin perhaps or other veggies.
But usually the base of the pancake batter is just flour (in your case chickpea flour which is great) and cabbage. Carrots aren't usually found within the base and green onions and ginger are definitely saved for the 'okonomi' portion. Traditionally fish broth would be included and depending on the region eggs. The batter is meant to be plain because you put your own preferred ingredients on top and build it up!
Also, while I love cilantro, it is definitely not a garnish/flavour profile that is commonly used in Japan.
Since this is such a departure from what an okonomiyaki is, could I suggest you change the name to not confuse people? Perhaps 'Asian Inspired Veggie Pancake" would be more appropriate?

I make okonomiyaki quite often and sometimes substitute shredded raw Brussel sprouts in the place of cabbage. It works really well. I like wasabi Mayo as well as a drizzle of sriracha. By the way I am making (and loving) your basil dressing quite frequently!

Love that you're back to this more meditative cooking style with just the music. Your voice is lovely, but I prefer just seeing the ingredients in writing and hearing the sounds of the food, and then hearing you chat later, instead of listing out each ingredient verbally.
