Roasted oil free veggies are wonderful! I like to toss with fresh chopped herbs like basil and parsley after roasting. And I take leftover roasted veggies, put in my 9” cast iron skillet, maybe add some vegan cheese shreds, get a bottle of Just Egg, shake well, pour over the veggies and bake at 400f for about 20 minutes. Yum!!😋
Jill, I love the pace and vibe of your videos. They remind me of watching cooking shows on PBS with my dad. My husband and I have been plant based for almost 2 years now. The simplicity of your meals is great. This lifestyle can be easy and flavorful if you are fortunate enough have access to healthy food.
Just made this and it tasted great. I paired with vegan pancakes 🙂 Really liked not using oil and am trying to do so with all other meals. Good to know I can do in the oven with Vegetable broth.
I am in the process of making this right now. I haven't ever tried tempeh before. I just mixed up the broth for it and diced it up. Its delicious! Funny thing is I cut the recipe in half because there are 2 of us. I decided to cook the whole 8 oz. package of tempeh and still only made half the marinade for it. Still came out great. Super flavorful! Thanks for another great recipe!

Made this tonight and while good I think I ran into a problem with measurements….we don't have Russet potatoes here so I was just going by own judgement but didn't get it right..also as I don't eat peppers it was difficult to get ratios correct. What are the weight of the potatoes and combined other veg you used please? Thanks a mill.
I made this last night, and it is REALLY good!! This is similar to a recipe I use that calls for steaming the veggies, but this is so much easier!! There are far fewer pots and pans to clean up. I followed Jill’s recipe exactly with no substitutions. The only thing I did differently was that I added caramelized onions at the end and then topped it all off with chopped avocado. I bet it would be good to add chopped fresh tomatoes when baking the veggies. Thank you, Jill, this is definitely a keeper!!
I made it today but had it for my dinner, and had smoked tofu because I'm not keen on tempeh. Really delicious will be doing that regularly I can see. Thank you.
Hi Jill, I just made the Hummingbird cake today. It came out delicious and moist. I'll only add nutmeg ir cardamom next time. I'll try this recipe soon. Thank you for your great ideas 🙏
