Hello everyone. Thanks so much for watching our new Enchiladas Video. This is one of our favorite recipes and we have been making these enchiladas for a few years now. These enchiladas were awesome!! I doubled the recipe and it made 2 1/2 13×9 pans! But 3 of us adults ate almost one pan for dinner ๐ Also, I put the sauce on the top as I went along which helped to prevent the tortillas from cracking. So good!! Thank you!
You guys are great! This looks really good, although seems like a lot of work. You crack me up! I would have definitely used the broken taco shells. Just cover it with sauce. No problem
haha second video I watched where your pot was to small. I use to do it too. Now I figure bigger is better you can always add more but not less.Alos pots clean the same. Peace. Love your videos.

I made this recipe last week with one change – white corn tortillas and I dip each in the sauce before rolling it. After they're all rolled I then drizzle the remaining sauce over the top. They roll easily with no cracks at all!

Wow, these look fantastic! I usually make Jane's Jammin Burrito filling and make enchiladas with it, but this looks like a more flavorful filling ๐ I love the idea of putting servings in the freezer. Thanks for another great recipe!!!

Thank you for all your hard work and dedication to helping us all eat healthier! LOVE the potatoes w/kraut and mustard!!!! AND it's Mary's Mini Compliant! It's such a quick, great low cal meal! The spicy mustard from TJs has a lot of horse radish in it and it is so good! SK in NC
What spectacular enchiladas. Just love the combination of black beans and butternut squash and then you added my favorite hatch chilies Yum Yum. I love your easy and delicious enchilada sauce also nice and smoky spicy. I am not a fan of canned enchilada sauce the sauce is just perfect
They look awesome ๐๐I probably wouldn't change a thing in this recipe. Love that you used quite a bit of garlic for the enchilada sauce! I feel like it can never be too garlicky, when something is cooked ๐

I discovered them at my local grocer over the weekend and decided to get a couple (even though I've never heard of them, but they're a whole plant food so they must be good).. From the research I've done thus far I think I will like them. My dilemma is that I don't know which recipe would be best and I don't want to make something the kids won't like either. So, if anyone has any knowledge and experience to share, I would be greatful. Thx ๐
Great video and I love WFPB vegan recipes. Those Enchiladas look good but I would of still have eaten the ones that opened up because I don't believe in food waste.
Looks great! Yummy in the Tummy! Never had enchiladas growing up cause we lived in Michigan & that was 70 something yrs back. When we moved to San Diego, I learned to do other dishes. Gotta admit that looks so easy & very tasty. Keeping that one!๐๐

I always dip my tortillas in water before heating them up. Works great. They never split.

Looks good! Quick tip before you fill the tortillas dip them in the sauce, just to wet them you donโt have to heat them up for 45 seconds.

Maybe long the pan with parchment would have stopped the side of the enchiladas from sticking.
