As a non-vegan I'm often the first person to call bullshit on vegan recipes claiming to replicate the flavors of non-vegan stuff…but I'll be damned if this isn't a really good faux-Caesar dressing. Admittedly, it's been years since I made authentic, from-scratch, creamy Caesar dressing, so maybe my memory is off, but still, this hits a surprising number of key flavors I'd want in a creamy Caesar dressing. Even if you don't want to call it a Caesar dressing, you can just call it a delicious creamy cashew dressing. Whatever you call it, this IS really good. Thanks for the recipe – I'll absolutely be making this again.

I forgot to soak cashews. I used apple cider vinegar because I ran out of lemons. I used old fermented cucumber juice. I used four garlic cloves. I blended over and over. I used salted cashews. I was craving caesar dressing but had few ingredients and had to improvise. The Dijon mustard really helped make the caesar smell like caesar. Very good. Thank you!
I just made this and it is FANTASTIC! Thanks for sharing. I have been look everywhere for a RAW Vegan Dressing that I can use more than just once. Most I don't like after the first try. This one is everything!
Yumm! I've made this a couple times , delicious. Even my carnivore eating family raved how delicious it was (especially made with home grown lettuce) heck even the kids loved it! And that tells you so much right there 😁💞
I make a dressing very similar to this but use capers instead of pickles. Whichever you use, it’s an important ingredient for that salty, briny bite. I also like to add a couple dashes of a vegan Worcestershire sauce for additional umami, if I have it on hand (not critical, but a yummy addition). This dressing is wonderfully savory and my Caesar salad loving SO says my salad is his favorite!
Wow! This dressing is amazing! I could totally give up traditional ceasar dressing for this stuff. I served it with some raw broccoli and my husband couldn't stop eating it. Thank you for this great recipe!

Great recipe. I had everything assembled and only then realized I didn't have a pickle. Looked around for that umami flavor and substituted your delicious black garlic oil, just 2-3 teaspoons and it came out great. Thanks again dear Wil

I have made this recipe so many times – I thought it was about time I gave a review! IT IS SIMPLY THE BEST VEGAN CAESAR SALAD DRESSING! The title does not lie! I double the garlic – I like that extra punch! The dill pickle also gives it that extra kick – who would have thought of that!!! SO SO YUMMY! I share this with my vegan and non-vegan friends and everyone is floored by how good it tastes!
I tried both caesar recipes now, the one with capers and this with the pickles. I prefer this one, it tastes very smooth and aromatic 🤩 Capers have a strong flavor, and if you like a tough player in your caesar dressing go with Wil's older caesar recipe 😊👍
