Halloween cupcakes:
15g flax meal
180g almond milk
40g coconut sugar
30g maple syrup
140g apple puree
40g melted virgin coconut oil

45g almond meal
45g cacao powder
75g corn flour (not starch)
85g rice flour

1 tl baking soda
1 tl apple cider vinegar
———
1 can full fat coconut milk, kept overnight in the fridge
3 spl powdered sugar
1 piece of dark and white chocolate
Oreo cookies for making bats
Preheat oven to 180C.
In one bowl mix the first ingredients.
Shift second ingredients into another bowl.
Mix dry to wet.
Add soda and vinegar, mix well.
Pour into cupcake molds and bake 30min. Let it cool down completely before decorating.
For deco melt chocolate and make drops for the bat eyes. Place to the fridge to set.
Take the coconut milk can and separate liquid from the cream.
Whip cream with sugar until fluffy, put into piping bag and decorate cupcakes with cream, Oreo bats and chocolate eyes.
