I think using tofu for baking pies (especially pumpkin pies) is my favorite! I avoided it for years because i thought it must be "gross" but you really can't taste the tofu!
I really needed this, so thank you so much. I do have a question, though. What do you consider a serving of tofu? From what I can tell, the packages all say they have 4 servings, but whenever I see a recipe made with a photo, it looks a good deal more on one plate than what I would estimate one serving to be. I just don't know so I am genuinely asking. I do realize that unlike meat, it's got a better nutrition profile so it probably doesn't really matter if I splurge a little on our plates/in our bowls. I just know that if I serve one serving as per the package, it doesn't look like much (especially for those really hearty eaters in the house!). I appreciate your input, Nikki.

Just this week I used soft tofu to make a creamy lemon pasta sauce and oh my goodness – so so good!! I love how versatile tofu is, and it's something I wish I had known when I first went vegetarian as a kid.

Love your videos and recipes! ๐ My two favourite ways to eat tofu are: chocolate tofu mousse and tofu scramble. Chocolate tofu mousse: In a blender, put 1 pkg silken tofu, 1 pkg MELTED Enjoy Life chocolate chips, 1 tbsp maple syrup and 1 tsp vanilla. It blends up creamy but keep it in the fridge for a few hours to firm up, and it's so decadent. Tofu Scramble: saute any veggies (I love mushrooms, green peas, broccoli) in 1 tbsp oil in frying pan; drain and add 1 pkg firm tofu, crumbled. Add 1/2 tsp turmeric, salt & pepper, and 2 tbsp nutritional yeast. Fry over medium heat until as browned as you like. You can also add cumin, garlic, cayenne to taste.
Keeping dates in the refrigerator isn't weird at all! They have the most wonderful, gooey consistency and taste so decadent, just on their own. I think the initial quality factors in, because a good medjool date like you have there is exactly right.

I love tomatoes, and sun dried tomatoes are on another plane for me, so the pan fried tofu looks like a must try. Everything you do makes it easier to eat healthier and go vegan. I do a snack smoothie sometimes with tofu, 1/2 banana, pb2, celery, zucchini, spinach, frozen pineapple and you'll think I'm crazy but also add a little bit of cooked sweet potato… this combo has such a unique and good flavor
