Hey Guys, I made this curry for dinner tonight, and it was absolutely amazing! I substituted green cabbage for the pak choi (hard to find in my area). I realized I was out of Tamari so I used teriyaki instead. I had to substitute roma for cherry tomatoes, and I added broccoli to the party, and it still was amazing! The almonds provide a lovely texture note. You guys continue to inspire me on my new vegan path (Vegetarian for 10 years and now gluten-free vegan for 2).

The tamari is back! 🙂 I enjoy watching your videos. If you want to give it a more Thai taste, instead of the lemon juice and tamari, you can add tamarind paste and crushed peanuts.
I wonder if microplaning a little of that lime zest into the curry would be nice…? Or perhaps a bit too much? Drained, rinsed butter beans might be nice in lieu of the potato. Similar texture.

The peppers with four sections or kind of bumps on the bottom are "hers" and the ones with three are "hims". That's how to identify the male plant from the female. Females are better for raw dishes because they tend to be a bit sweeter while the males are better for cooking because they're not as sweet but they hold up better in heat. Fun fact!
What kind of chili pepper is that, though? No one ever mentions it in their recipes and there are so many varieties of peppers.

INGREDIENTS
1.5 Tbsp oil
1 small onion
2 cloves garlic
Thumb-sized piece of ginger
2 Chilli peppers
2 handfuls of mushrooms
2 tbsp Tamari
1 red pepper
20ish cherry tomatoes
1 can of Coconut milk
2tbsp medium curry powder
Handful of cooked potatoes (or a can of beans)
1 head of pak choy
25g coriander / cilantro
Juice of 1 lime
Flaked almonds (Optional)
