Makes 10 bites
Ingredients:
– 1 cup shredded coconut
– 1 cup cooked cannellini beans
– 1 tsp vanilla extract
– 2 tbsp maple syrup
– 2 tsp matcha
– 1 tbsp melted cacao butter or coconut oil
– 40g dairy-free dark chocolate
Instructions:
– To a food processor, add the shredded coconut, white beans, vanilla extract, maple syrup, and matcha. Process until a dough is formed.
– Roll into 10 individual bites. Refrigerate for 15 minutes.
– In a microwave-safe dish, add the chocolate and cacao butter. Heat up 20 seconds at a time, stirring in between, until smooth
– Using two forks, dip the ball in the chocolate until completely coated. Repeat for all the bites.
– Refrigerate for 1 hour to set. Sprinkle with more matcha if desired. Keeps 5 days in the fridge. Enjoy 🤍
