Beg to differ on coconut milk. I have been consuming lots and lots (no less than 1 kg each week) of FRESH coconut milk for many years (more than 10 years) and my blood test cholesterol results are always very good. Coconut milk saturated fat is a plant saturated fat ie medium chain triglycerides and hence they are not the same as animal fat saturated fats.
The results of my blood test on 20 November 2022 are as follows:
1. HDL – 133.80
2. LDL – 96.67
3. Total Cholesterol – 240.14
4. Total Chol/HDL – 1.79
5. Triglycerides – 48.72
All the cholesterol and triglycerides numbers are within the recommended ranges except for the Total Cholesterol. However I don't think it's alarming because Total Cholesterol is the sum total of HDL, LDL and other lipid components. Given that my HDL is very high, my Total Cholesterol will definitely be high. Eg, if my HDL is lower at 2, then my Total Cholesterol will be 2+2.5+0.25=4.7 which will be within the recommended range of =<5.2. BUT a higher HDL of 3.46 is certainly much, much better than a lower HDL of 2!

I too keep it simple, so simple that I now do less cooking in advance – but I still keep a few meals/ingredients ready in the fridge for when I'm hungry and I have no time for cooking so I'm not tempted to eat higher-calorie foods. 2 and a half years vegan and maintaining my slim weight, I still cannot believe it's me when I look in the mirror! I am 56 and used to hate myself and my body. For the first time I think I look OK and I am so happy I made the choice to become WFPB, it's all thanks to Chef AJ and the wonderful doctors who give their time to educate us, thank you!
