This sounds delicious! But I am intolerant to flax, almonds, nutmeg and sunflower seeds (also teff, walnuts, allspice, poppy, safflower, and sesame seeds.) I presume that I could substitute chia seeds for the flax; would the amount also be 1 Tbsp? Could I simply increase the amount of pecans to substitute for the sunflower seeds? What would be a good substitute for the almond flour? (Thank you for formulating a gluten-free and vegan recipe because I am very intolerant of gluten, wheat, dairy and eggs.)
