I made this last night (the day you posted-lol). In my years of being vegan I have made probably 20 mac and cheese recipes. This one is the best. Nisha, you've cracked it. Last night my husband said, through mouthfuls of this pasta – "IDK what you're having for lunch tomorrow, but dibbs." Thank you for being a trustworthy recipe writer. It is so valuable knowing I can follow what you say and know it will be good. (e.g. using coconut milk for this recipe. I would not have done that, but I trusted you that it wouldn't be coconuty and it wasn't!)

This will be our new go-to recipe for mac & cheese. It was a hit Christmas Day (along with your Vegan Wellington with Mushroom Gravy). I made the cheese sauce a couple days in advance; made the elbow macaroni the day before. Then, Christmas Day, combined it, added the panko topping and . . .yum!!! So easy and delicious. I was surprised that we enjoyed it more the following day and even more so the day after that. It just firmed up, without the pasta getting mushy.

I made this recipe yesterday for my Friendsgiving and it was so good! I didn’t have time to make and add the crispy topping & I didn’t have onion powder but it was still amazing and All of my non vegan friends liked it a lot too! Definitely gonna be making this one again before the holiday seasons over.
I made the sauce the day before Thanksgiving and while it had a good taste, I didn't think it would fool anyone that it was cheese. I told my diners to expect pasta with a good sauce but not mac and cheese as they know it. OMG! It tasted just like a delicious traditional baked mac and cheese. Vegans and non-vegans alike were impressed. I used frozen butternut squash, Ripple Half & Half for my plant-based milk, and chickpea pasta. Next time I'll make it exactly per the recipe. My pasta came in an 8oz box, so I had a bit of sauce left over. Added jalapeno and had with tortilla chips. Again, absolutely delicious. Thank you so much for this brilliant recipe!

I'm not vegan but am exploring vegan dishes, and I was absolutely blown away by this. I did not expect to like it so much, and I do, it's creamy and savory and I was worried about the coconut milk but you dont taste any of that. Amazing recipe.

I made this tonight, and was convinced there was noway it would look as good as your one and absolutely no way it would taste cheesy…oh my god! It is so creamy and cheesy! I’m not vegan, but slowly trying to cut down on dairy/meat as I have psoriasis and there is a link. This was amazing and I can’t wait to try more of your recipes.

I’ve made this twice now. I followed your recipe exactly the second time with the tapioca flour and it does add something. Even my not vegan daughter wanted 3 bowls. I use shells pasta instead of the macaroni shape. I will continue making this.
