these all look amazing!!! but as a Mexican they could have done or put a little more effort into doing a better taco or even a better vegan option for another dish, hibiscus flower would have been good too but just a garbanzo taco feels sad in my opinion 🤷🏻♀️ 🇲🇽

For Mexico, I recommend trying Calabazas/Calabazitas (Squash). Even though it originally includes pork, you could remove the meat altogether or add a different vegan form protein

I'm sorry to break it out to you, but pesto is not vegan. It contains parmigiano, which is cheese. There definitely is vegan pesto out there, just a heads up

As a Thai, you COULD do something like 0:36 (no one does this in Thai, though). HOWEVER, cook the noodle seperately ,and put more curry paste and coconut milk. You cook the red cuury paste crrectly, although it is not the most traditional way. BUT a few peaple in Tailand do it correctly because sometimes it wastes the time. Also using cauliflower instead of brocoli would probably more delicious.
Typical American food is so meat centric, that branching out to the dishes from other countries is a must..
In Greece there are stuffed peppers/other vegetables with rice, kaltzounia (pastry) filled with spinach, melomakarona (Christmas honey sweet that's vegan if you replace the honey with another syrup), spinach pies, fava, lots of stews e.g. lentil, minestrone, a sort of potato pastry, vegan bougatsa (99% of the time made with animal milk, but can also easily be found vegan in supermarkets or specific bakers), tomato patties, fried zucchini, dakos without feta (rusk with grated tomato and olive oil) etc.
