Potatos == Nightshade vegetables == bad for me. I plan to use sweet potatoes as substitute — adding more salt and ACV to compensate for the sweeter potato.

I've been plant-based since August 1st, so this is the first homemade vegan mac and cheese that I've ever made. And it was so good! Probably as close to cheese as I can remember. I don't think that I even need to try another mac and cheese recipe!
this non-chalent, sorta-kinda-grumpy 'approach' reminds me of how miss rachael ray slowly got a little less radioactively happy year to year and is now almost on a similar wavelength herself….except then the vanity broke out from hiding…..hehe, but great video, i Luuv love it

Do you know something to use instead of nutritional yeast? last year I found out from a noted nutritionist that nutritional yeast, over time puts holes in your brain. You should have been in the room. He said the whole idea initially was good, but after the process that it goes through caused this mess. #pindrop. I never touched it after that. I would prefer to be sure, safe and not sorry.

So I just made this recipe but I think I used the wrong tahini :/ I went to the link but it brought up like 50 different ones. So I bought one that was nutty(?) I don’t know if it was right at all. Please help!!!

i really love this recipe but if you have leftovers, i find it's best if you don't mix the sauce with the pasta and store in the fridge (just store the sauce in a separate box), because it has a high water content so the pasta soaks up all the water and goes really mushy

Looks good! I like substituting the potato and carrot in Mac & Cheese recipes with frozen butternut squash. It<s very quick too.
