My husband and I are working toward plant based diet. Unfortunately, I am a breast cancer survivor and my oncologist said NO! soy. This makes it challenging, especially in purchasing cookbooks which limits the number of recipes I can use in them. Your Instant Pot cookbook has been a blessing to me.

You might consider running the audio through a filter to cut out some of the background frying-pan sizzle. Your edamame toast recipe was really good. For the Asian-Inspired Noodles, I've made a very similar dish with Soba (buckwheat) noodles.

I really like your channel, but it makes me anxious not to see the dishes you prepare in a closer close-up with enough time. After seeing a recipe, I really like to see how the dish turned out and to have time to pay attention to the details.
The edamame avocado mash was phenomenal. Use half the soy (or tamari) at first to see if you like the salt level. I used one tablespoon of tamari and found it to be pretty salty.
That Asian-inspired noodle dish looks amazing! And I've always got all of those ingredients or decent substitutes, so I'm definitely gonna try that one. I only have normal firm tofu though, so I'm gonna have to do some work on it.

Wow, that ricotta is wonderful! So simple and yet so delicious. Creamy and rich, just like real ricotta. Now I want to make manicotti shells with it!
