meal prep
hummus:
1 can of chickpeas
2 tbsp tahin
½ lemon’s juice
½ tsp salt
black pepper
2 garlic cloves
¼ cup of water
green pea pesto:
1 cup of green peas
½ cup of soaked nuts
½ cup to ¾ cup of water (i made mine quite runny, just add less water if you want a pesto-consistency)
1/3 cup of nutritional yeast
½ tsp salt
black pepper
roasted pumpkin:
1 pumpkin, cut into cubes
2 tbsp evoo
2 tbsp maple syrup
½ tsp – 1 tsp paprika
½ tsp salt
black pepper
bake at 180°c for 20-25 min, depending on the size of the cubes
overnight oats:
1 cup oats
1 cup soy milk
1 tbsp chia seeds
1 tbsp cacao powder
falafel:
1,5 cups store-bought falafel mix + 1 cup water, let sit for 10 minutes, form balls and air-fry or bake at 200°c or 400°f for 20-25 min
mini banana cakes (you can also make muffins with this batter but i do not own a muffin tray)
2 cups flour
1 banana + 1,25 cups soy milk + 1 tbsp apple cider vinegar + 2 tbsp apple sauce
2 flax eggs (2 tbsp flax seeds + 4 tbsp water)
pinch of salt
¼ cup sugar (more if you like it sweeter, but in my opinion the banana and apple sauce add enough sweetness)
1 tsp cinnamon
1 tbsp baking powder
bake at 180°c or 350°f for 25-30 min (5-10 min less if using a muffin tray)
what i eat in a day
breakfast:
overnight oats with 2 tbsp apple sauce + peanut butter + blueberries
lunch:
baguette with chickpea curry salad (1 can chickpeas, 1 tsp curry, salt, pepper, 2 tbsp soy yogurt)
mixed greens, cucumber, pickled carrots (recipe in my last video)
kohlrabi and bell pepper on the side
snack:
chocolate milk (soy milk, cacao powder, sugar beet syrup)
+ muesli + strawberries
dinner:
roasted potatoes, maple pumpkin, brussels sprouts, green beans (all cooked in the same oven at 200°C or 400°F for 20-25 min)
on a bed of mixed greens, green onion, smoked tofu (massaged with hummus)
topped with pea pesto and chives
other recipes
red lentil & pumpkin soup:
½ cup of soaked red lentils
1 onion
3 cloves of garlic
1 carrot
2 tbsp tomato paste
½ tsp chili flakes
½ tsp oregano
salt, pepper
2 cups veg broth
instructions: fry onion, carrot and garlic in evoo until soft, add spices, tomato paste and lentils. cook with vegetable broth until the lentils are done (about 15 min).
add the rest of the prepared pumpkin, blend with an immersion blender until super smooth. top with coriander.
green pea pasta:
pasta of choice, i used gnocchi
yellow lentils
1 onion
2 cloves of garlic
salt, pepper
any veg you want to add, i used ½ of an aubergine and a few green beans
handful of fresh cherry tomatoes
nutritional yeast
instructions: fry onion, garlic and veg in evoo with spices, then add the yellow lentils and ½ cup of water and cook for 5 minutes before adding another ½ cup of water and the gnocchi. cook until the water has evaporated, add the sauce and simmer for 2 minutes. top with nutritional yeast.
falafel salad:
mixed greens
cucumber
bell pepper
red onion
cherry tomatoes
fresh chives
falafel
dressing: 2 tbsp evoo, 2 tbsp balsamic vinegar, salt, pepper, maple syrup
side of crispy baguette (fried with 1 tbsp evoo and salt)
