I like this recipe, but I probably roast carrots too and add some dill. I also would skip resins (too sweet for me), plus, if carrots will be roasted, they will become sweeter too.

I LOVE potatoe salads… I don't put carrots in it but loads of coloured peppers, a tad of hot peppers, little cubes of cukes, a bit of celery of course and, sometimes, if I have guests, I will put some hardboiled eggs sliced (I don't digest eggs too well). Of course, I do my own mayo so, no sugar at all but… a huge load of oil plus a yolk… hard for my digestion. So I am very pleased to see your sauce recipe… sure, I am trying it this week…. I will just omit the raisins and I think it will be perfect… sooo looking forward to try it. Thank you for this recipe 💞
PS: Wanted to know… is roasting the potatoes in an airfry would do the same or is it better the way you did it, in the oven???

You can also add some canned/cooked corn, peas and apple. 🙂 I have been vegan WFPB half a year now (before I was ovo vegetarian and sometimes had cheese but it is really harmful to you, not to mention: SO FULL OF CRUELTY!), lost 12kg (I also do intermittent fasting 8/16, my last dinner is from 6-7pm and it works!!! ) and got rid of my pms and painful crampy periods (I have or had? 🙄 polycyctic ovaries). I do now lots of sports as I am really fit and have tons of energy! Thanks to Dr. Greger, Dr. Esselstyn and many other vegan plant based wholefood diet promoting doctors and channels. 💚🤗
A good trick to getting all the dressing out of the jar is to save some of the carrots and celery and shake them around the jar once you've got out most of it. The rest of the dressing will come out with the veggies

Just steamed my potatoes and blended some silken tofu with the mayo recipe. Out of this world. So good.

Never put carrot in potato salad before. I would roast the carrots if I ever put them in. Think raw carrot would be too hard of a texture for this.
