This is a great vid, i've been struggling with salad for dinner for exactly this reason, plus my fam does not want it and there are always some more ready leftovers. One thing i missed in this video are tips on storage of precut veggies. You mention you keep some in a bowl. I'd also like to know how long they last on average… Maybe i need to re-watch it. But thank you for sharing, i love a salad like this for dinner too. All the best!

Yep, I sliced the very tip of my finger off ! I did heal and was told that I came close to loosing the top of my finger. So please take it from someone who really knows what it like not to use the protection needed when you use your mandolin. Get the glove ! I did !
Washing/rinsing mushrooms makes them soggy. Store bought mushrooms are not grown in dirt–they're either hydroponically grown or grown in compost (which has been sterilized).

pre cut vegetables very quickly lose their vitamines…it‘s really best to prepare / chop them as short a time as possible before your meals, in order to keep most of their nutritional value

I used to like the green bell peppers esp. because they are less expensive than the other colors. But then I was a raw foodist for a while, and one day I ate a bowl of nothing but green peppers — and BOY did I suffer in pain! It was like a boxing match in my stomach! At the time a long-time raw foodist I had met named T.C. Fry was around, so I called him and told him about it. He said it was because green bell peppers is UNRIPE FRUIT. Wow. What a surprise! I have never had any problem with the ripe yellow, orange, red and purple bell peppers, and from ever since then I avoid green bell peppers unless they are cooked into something I am eating (but I won't cook them myself). I LOVE salads. Lately I have been adding fluffy cooked brown rice to my salads as well as balsamic vinegar as the salad dressing, often some garlic, black pepper and a wee bit of salt. (Oh, and I had a problem with eating raw mushrooms as well, which make me slightly nauseated, so that's a great suggestion about cooking the mushrooms.) I sometimes also put beans in my salads as well as avocado (which I know a lot of people think it is too oily). I love to put several types of lettuce in my salad: like baby kale or baby arugula, spinach and romaine or other lettuces. Salads are a real lifesaver for me — and I like them mostly for breakfast! I don't use all the things you do in salads, but lately I have been enjoying things I didn't used to like in my salads, including celery (cut small, like diced), radishes, shredded beets, cucumber (also diced — I have teeth problems thus all the dicing), and diced onions. Always I love to have tomatoes, and sometimes I like to add a few sliced up Spanish olives. P.S. I probably never would have tried balsamic vinegar, but started doing it because the heart doctor, Dr. Caldwell Esselstyn, Jr., explains how eating leafy greens (or even broccoli) with a little bit of balsamic or rice vinegar and the chewing you do where it all mixes with your saliva makes it so that more nitric oxide is created which REPAIRS arteries that have been greatly injured by oils and whatever in the diet. He is so into that he wants people to eat a cup of greens with "a few drops" of vinegar six times a day! I don't know that I will ever get there, but I do know my arteries all over my body including my heart can use all the help it can get!

Thinking I could mix all those peppers, mushrooms. Onions, zucchini. Tomatoes and broil them on a cookie sheet. This would help me to change up the cold salad on days I need hot foods
