I've been watching your different tofus out of legumes vids & loving them, I know I even left some comments, but idk why I didn't realize you were vegan keto- duh, me!😂🤷♀️ Ive been plant based for years now but I cut out gluten at the end of last year, and I feel much better, so, after making diff adjustments this month I decided I wanted to try keto or paleo, I'm really kind of concerned or unsure of some things though, so this will be a helpful guide just to give me an idea. Also, I looked up the diff between between keto & Paleo but I've forgotten, esp as it relates to plant based- I think I looked up Too much stuff this past month trying to figure out my optimal diet, bc now my head is just swirling w confusion abt so many things abt cutting out carbs on a plant based diet.

Not sure whether you see comments on older vids, but just in case: I feel strongly that humans aren't built to digest wheat. I say this regretfully — with food prices so high, I've had to add whole-wheat pasta [ = v. cheap] to my diet, and I enjoy it — but nonetheless firmly. So, it's not surprising that your body responded diff. after you'd had some wheat pasta. I agree with "All carbs are different, and some aren't beneficial" and am adding "Some seemingly healthful carbs, such as whole wheat, are maybe unhealthful for some / lots / all of us." Best wishes.

I am not even remotely low carb but I see so much value in these vids! people who have gripes have no desire to think a little. I can immediately see ways to alter these to fit what I would want for a complete meal. Its like ppl cant fathom taking value from these delicious recipes while possibly adding something or possible you know…just eating carbs later…

That high fat percentage is usually only recommended in the beginning to get yourself into ketosis. Once you are in ketosis you can lower your fat consumption to maintain it bc like you said your body can use your body fat for energy. Ofc everyone's body is different. Im so glad your ketosis journey has helped you sm! Theres so many misconceptions and misinformation on keto but It really has endless benefits!

MARY! i love these long videos and your commentaries. I am Keto myself well , “lazy keto”, had a biscuit muffin this morning. But that’s probably my only set of carbs for the day. It’s usually high protein yogurt, mint water, and protein shakes along with whatever whole foods i can throw into the mix without overdoing the carbs.

I’ve made the shiritaki ramen almost daily since you shared the original recipe, and since the noodles are only 20 calories I often double it for dinner. I mix in pan fried oyster mushrooms, onions, and sugar snap peas and top with savory crumbled tofu. It’s the best recipe I’ve ever had using those noodles, definitely a staple ❤

I love tofu puffs, but I've never thought to bake them _ I know what I'm doing with them next time! Plus, my local grocery has stopped selling the frozen ones, so I have to go with the packs you have in your video now and I sometimes struggle to use them up (I live alone and my appetite comes and goes depending on my menstrual cycle!). They also just stopped selling frozen vegan Korean "steaks", truly an attack on me, personally.

Happy to hear about your success decreasing or eliminating your pain issues. Going vegan 10 years ago helped me with stomach issues and my husband eliminated his acid reflux. What we put in our bodies really matters, doesn’t it?!

Yes Please! I'd love to see both keto tortillas and bread recipes. Both are also pricy in the US. I've been able to get decent versions of both at my local discount grocery store (Aldi) but they are not dependable to have both all the time. 🙂
Glad you did another video on this. I really do believe I feel my best following a vegan keto diet. I started it again last week eating about 35 carbs a day and not as much fat as recommended simply because I felt satisfied with the amount I consumed. I felt great. I splurged over the weekend not keto and felt the difference in a negative way within hours.

I'm in love with my vegan sausage McMuffins for breakfast. I get a 6 pack of 100% whole wheat (vegan) English muffins for $1 on sale or $1.50 regular price, at Meijer. I cut a block of tofu into 6 slabs and pan fry with veg oil. I season the tofu eggs with Old Bay or with turmeric and chili powder. I brown Morningstar vegan breakfast sausage patties in a pan & season with ground cayenne and ground fennel seed. I toast & butter (vegan butter) a muffin, lay on a tofu egg & a sausage patty. Sprinkle of salt! DELICIOUS. BETTER THAN MCDONALDS!!!
