overnight oats: 1 cup oats, 1 cup soy milk, 1 tbsp chia seeds (this is the base recipe I use all the time)
toppings: cacao powder, peanut butter
sourdough + Dijon mustard + leftover chickpea curry mash (see my last video) + sauerkraut (I don’t even know what this combination is)
crispy chickpea salad: handful mixed greens, ½ bell pepper, ¼ cucumber, 1 stalk parsley, 5 sun-dried tomatoes, ½ can of corn, 1 can crispy chickpeas, leftover quinoa
dressing: 2 tbsp oil from the sun-dried tomatoes, 2 tbsp balsamic vinegar, salt, pepper, touch of maple syrup
soy yogurt + muesli + grapes + cinnamon
sesame tofu rice bowl
tofu marinade: 1 tbsp sesame oil, 2 tbsp soy sauce
brown rice
steamed veg (I used carrot and green beans)
green onion for garnish
tuesday
overnight oats: 1 cup oats, 1 cup soy milk, 1 tbsp flax seeds, frozen blueberries
topping: strawberries, peanut butter
sweet potato salad:
bake sweet potato for 20-25 min at 190°C or 390°F
salad: mixed greens, cucumber, bell pepper, red onion, green onion, parsley, tomatoes, ½ can white beans, massaged with hummus
apple pancakes:
1 apple, cut into slices with the core removed
batter: 1 cup buckwheat flour, 1 cup soy milk + 1 tbsp apple cider vinegar (I would do ¾ cup of milk next time), 2-3 tbsp maple syrup, pinch of salt, cinnamon, 1 tsp backing powder
peanut butter noodles:
veg of choice, I used aubergine, green beans, mushrooms and peas
1 red onion, 4 cloves of garlic, 1 piece of ginger
pasta of choice
peanut sauce: 2 tbsp peanut butter, 2 tbsp soy sauce, black pepper, pinch of chili powder
wednesday
oatmeal: 1 cup oats, 1 cup soy milk, 2 tbsp chia seeds, cacao powder, apple sauce
frozen blueberries, frozen raspberries, peanut butter
marinated chickpeas on a bed of couscous
1 can of chickpeas, cherry tomatoes, bell pepper, cucumber, fresh mint
marinated in: 1 tbsp evoo, 1 tbsp white vinegar, salt, pepper
½ cup of couscous, soaked in boiling water + tomato paste + veg stock powder for 15 min
topped with red onion
banana bread: 2 cups oat flour, ¼ tsp salt, 1 tsp cinnamon, 1 tbsp baking powder, 1 flax egg, 1 cup soy milk, 1 banana, 1 tbsp apple cider vinegar, 3 tbsp liquid sweetener
bake at 180°C or 350°F for 40 min
serve with peanut butter
(this banana bread only has a subtle banana flavor because I don’t love the ones where there is 2-3 bananas!)
falafel pita:
2 pita pockets, falafel, hummus
roasted garlic aubergine (2 tbsp evoo, 2 cloves of garlic, salt, pepper, baked at 200°C or 400°F for 20 min)
soy yogurt, parsley
pickled carrots (1/3 cup vinegar, 1 tbsp salt, 1/3 cup water)
red onion
thursday
overnight oats with thawed blueberries + 2 tbsp apple sauce, 1 tsp cacao, fresh strawberries, peanut butter
banana bread + apple + grapes
salad + cucumber, bell pepper, green onion, cherry tomatoes, white beans, leftover falafel
dressing: 1 tbsp evoo, ½ lemon juice, salt, pepper, touch of maple syrup
baked sweet potato fries (2 tbsp evoo, salt) + ketchup
pita + leftovers from yesterday’s dinner + fried tofu (just evoo and salt)
friday
oatmeal + blueberries + raspberries + peanut butter
2 toasties with cashew butter, tomato and smoked tofu + side salad
beluga lentil bolognese with fried zucchini and pasta
bolognese: 1 onion, 2 cloves of garlic, 6 crumbled mushrooms, 1 cup of soaked beluga lentils, 1 can of diced tomatoes, 1 can of water, 2 tbsp Italian seasoning, salt, pepper
fried zucchini: 1 zucchini, 2 cloves of garlic, 2 tbsp evoo, salt
served with pasta, nutritional yeast and parsley
banana bread + peanut butter + soy yogurt + apple
saturday
overnight oats + frozen berries, 2 tbsp apple sauce, hazelnuts
marinated chickpeas and couscous
salad: cucumber, bell pepper, green onion, pomegranate seeds, fresh mint, red onion, 1 can of chickpeas, ½ can of corn
dressing: 2 tbsp evoo, ½ lemon, black pepper
couscous: 1 tbsp paprika paste, 1 tsp veg broth powder, double the amount of water to couscous used
banana bread + apple
leftover bolognese + fried zucchini + pasta
chocolate rice cakes
sunday
overnight oats + cacao + strawberries + peanut butter
sourdough + cashew butter + veggies + mixed greens, leftover falafel + ketchup
soy yogurt + muesli + apple + chocolate
curry pasta + peas, zucchini, carrot, onion, garlic, ginger
sauce for 4 servings: 4 tbsp evoo, 2 tbsp tomato paste, 1 tbsp soy sauce, 2 tbsp curry powder, 1 tsp cumin, 1 tsp chili flakes, 1 cup soy milk (pasta finishes cooking in the sauce to get all creamy)

I'm giving all your video's a like. Really love your content. I think it would be good for your channel to leave the recipes in the description. Not everyone reads the comments. I usually look in the description. Iff I don't see recipes, I don't follow.
