There's an amazing English Bangladeshi chap who has a channel called Lateef's Inspired, where he shows us all the secrets of a good curry made for Brits in his restaurant.
Made his version of this a few days ago and it was awesome and very similiar to yours. He's not vegan as his restaurant caters for all, but he has some outstanding vegan and vegetarian recipes on his channel. My parents (very conservative eaters, not in to chillies, like their meat) loved his subtle flavours. I'll leave it a few weeks and try them with your recipe, which looks amazing!
We Indian don't put coconut milk,tahini,almond butter,spinach.Instead of put ghee ( clarified butter) cilantro,and gorom masala whole and grounded one also.We donot scrap ginger garlic,we put paste and not green chilli, kashmer red chilli powder along with hot red chilly powder.
Hi, I just made this and it’s delicious, however, the coriander seeds and cumin seeds are really hard and an odd texture, almost like fiberous. Did I cook them too long or something?

I never try mint in my curry…. I need to do now😅. Look so good. And I'm totally agreed with you, put some curry powder in coconut milk is not a curry. I'm French but I'm pretty proud to my curry when a watch your video. Thank you 🎉

I absolutely LOVEEEEEEEEEEEEEEE the smell of curry! I worked in homecare for a period and I helped a family that made (they were Pakistani) food from scratch EVERY DAY. All vegan. Roti, dal, you name it. It opened my eyes and my taste buds to a world I never knew existed!!!!!! I have to say it is a cuisine like no other. It goes to your soul!

Hey I've cooked this dish last night, it was my first time cooking curry. I'm Brazilian so obviously very proud of my food, but I have to confess that this dish smells and taste so much better than the traditional Brazilian food I cook at home, specially how my home was smelling after I cook the curry, it was a very nice smells herbs… Me and my wife love it so much I'm going to try other of your recipes. Hi, I hope you read my comment and do get back to me. I loved the recipe and this is the first video I have watched of yours, I luckily had all the ingredients and decided to give it a try. It turned out quite nice but I couldn’t taste the coconut in it. Although I did put a can of coconut milk, maybe it could be that I added chilli powder in it to give it a hint of hotness, and I think that could have over powered the flavour of coconut.
I loved the recipe and would follow it to the tips next time, but I was hoping to taste the coconut flavour in it.

I've done this recipe twice in the past 2 weeks and its very tasty! The second time I left out the whole cummin and coriander seeds because it gave it a bit of a crunch once everything was done. I will definitely continue to use this recipe, thank you!
