I've been vegan since 1992, and I really admire your ingenuity in being able to cook healthy food when you're travelling. The Basque country looks so beautiful, and your drawing of the nuts is perfect! Your dogs are so adorable, too. 💕
Hi Holly, thanks for sharing your meals and life and van life with us. I am a follower of yours since you lived in Bristol. That's a long time. Always enjoyed your illustrations since I am an artist myself. Also I've lived fulltime in a van travelling in the UK and around Europe. I've been a vegetarian for 30 years and have gone vegan for 2 BUT I don't know what to eat anymore. When I watched your video I was surprised of the amount of vegan processed food you are consuming. The vegan market is a trend and is not a healthy one. Actually TRENDS are money driven: market opportunities to make a lot of money. Nobody cares about healthiness or anything really. I was very happy eating avocados, coconut oil, soya mince meat (to get to that lovely texture, the soya beans need loads of processes, including the use of bleach), coconut milk, vegan butter (what's that? pure bad hydrogen saturated fat) when after a year of veganism my body was "impregnated" with high levels of bad cholesterol amongst other things. Oh, and the plant based milks out there? Not going to go there. If the meat industry is violent for obvious reasons, the vegan industry is equally brutal and nasty. If you haven't seen a documentary on Netflix called ROTTEN please enlighten yourself. The first episode is about the aggressive industry of the vegans most loved fruit: The avocado. Children work on these farms. There is a mafia around it and a war for the control of natural sources of water. It´s awful. It´s ALL propaganda and politics. It´s so f*cked up. We need to educate ourselves. We are vegans but don't think we are being smart. We are equally contributing to a very nasty capitalism by consuming its propaganda and all the processed vegan food they sell. Don't be fooled by what you read on internet. If you search "soya mince" you are going to get beautiful texts about how healthy that s*it is. You need to dig deeper to find out how they make it and understand that you need to stop eating it. Right. I am going to stop now. Sorry for the long post. Sending loads of love xx
These dishes look delicious! I love my creamy mushroom on toast breakfast too. It has been a year since I became vegan but I wasn't perfect and want to do better this year 💞 I'm finally starting to like vegan cheese, especially on pizza 🥳

adding to the bread mix I would suggest the typical 'pan tumaca" which is basically, toasted baguette, pass a garlic clove through it + tomato spread on it + olive oil (its really nice). And a change from Seitan if you haven't tried it, Heura : )
Holly your voice is always so calming I would totally listen to an audiobook of yours. 😌 Again, love seeing those insights of Craig's and your life in the van. We're currently in Madeira (Portugal) and have a kitchen in our hotel room, which is perfect when you're vegan and/or want to save money. Our meals are also more on the "quick and easy" side but it's still better than eating out so much. I'm a bit over the tomato sauce though haha.
Since you are using gas to cook with; why not have a portable micro grill. I searched google for 'portable gas grill'. Likely you will find something within 20cm x 30cm footprint.
Direct heating from propane should get hot enough to make foods crispy.

lol my breakfasts are usually toast or toasted bagels with vegan butter, a bit of salt, pepper, lemon pepper if I'm feeling savoury. don't feel self-conscious, bread is life. 😂

I can't wait to try out some of these meals, they look delicious! I've never been a huge fan of meat and dairy but growing up I was always encouraged to eat them. It's only now as an adult that I've realised I don't HAVE to eat them if I don't want to, and I still catch myself eating something I don't want to simply because it's on my plate. I don't live a fully vegan lifestyle however I definitely enjoy most vegan foods and I love trying out new recipes! I always find your videos inspiring, but this one was such a pleasure to watch. I hope you are all having the best time travelling in your van. I can't wait to see where you venture next.

Just a quick one about the food sticking to your stovetop-oven… thing. Is it stainless steel?
I’ve seen videos on how to make stainless steel pans become “non-stick”, by heating it up to a certain temperature and then adding oil. Apparently if it’s done correctly, even if u change the temperature of the burner to cook it’ll retain that non-stick. I’ve never tried the technique myself personally and I’m not sure if it would work, different pans and all, but could be worth a look at 😊

If you guys are still in Northern Spain I strongly recommend going to Ribadesella as well as the National Park, Picos de Europa, honestly all of Asturias is so beautiful! I want to go back one day!
