I don’t really use recipes, but for one big tray like I made here’s the loose idea:
You’ll need a packet of lasagne sheets.
2 tins of pasta sauce or make your own.
Ricotta filling:
1 block of tofu
½ a cup of nutritional yeast
1 packet of frozen spinach
2 cloves of garlic
Salt and Pepper to taste
Tsp of Vegeta veg stock if you have it.
½ cup of soy milk (or until it’s a ricotta texture)
Handful of basil or parsley to take this to the next level.
Use a food processor to make the tofu mix into a ricotta-type texture.
Layer the 3 components, starting with pasta sauce.
You want to have moisture around the sheets so they cook.
Top with nutritional yeast, tomatoes, or vegan cheese if you’re not in a weight-loss phase.
Cook at 180°C for about 10 – 20 minutes until pasta is soft.
Enjoy with a big side of veg.

Vegans can get plenty of protein if they eat well. There's no reason to focus on protein.
I guess I just don’t understand it… Lasagna is made of pasta, meat, cheese, etc. you can’t make something out of other ingredients and call it a lasagna. If you’re against what lasagna is, don’t eat it. Create something else and give it its own name. It’s so weird to me.

Most of us are not as active/tall/young as you, lovely Chelsea, so even though we've reached our desired weight, we still need to eat the same as we ate during the later weight loss stages. Our bodies still require a low cal "diet", so no "weekend binges", as you called them. I don't do cheat days and if I eat a little more at one meal, I eat less at the next or make sure I go for a walk. I am Italian and was brought up on pasta and lasagne, I love them, but I don't try to veganise them by buying vegan cheese, etc. My vegan lasagne would be made with great homemade tomato sauce (chopped tomatoes, onions, garlic and basil), sheets of lasagne and veggies (spinach, aubergines/eggplant, courgettes, broccoli, I might add mushrooms too). The processed lasagne sheets would be the treat, higher in calorie than the carbs I would normally eat, and possibly a trigger ingredient for me as I love anything pasta-like and I could easily overeat. And that's it, I would not add other higher fat ingredients like tofu, soya milk, cheese and also I don't use nutritional yeast. Another good herb to add might be dried oregano or any herb you fancy. I never cook with salt/veggie stock cube but I add them at table, in the case of lasagne I might add them to the tomato sauce at the cooking stage. I also don't like spending a lot of time creating recipes, using the food mixer, etc. I am glad you had a lovely family meal but this recipe is not for me. Tip: in the UK we can buy frozen crushed or chopped garlic, it's so much cheaper and easier than buying garlic cloves and it's been a game changer for me. Most supermarkets do it now.

I love this lasagna dish, it's a favorite. I get it, a variety of dishes are best. I make all the yummy healthy vegan recipes for my family. My problem is portion control! Waiting 20 minutes to have a second plate would probably help a lot!🥰
I make a similar ricotta for our lasagne…. two tweaks to add a wow factor is blitzing a bunch of basil and a squeeze of lemon into the ricotta 🎉🎉🎉

Love the idea of better and not all or nothing works very well for me to hear right now. Appreciate your content- practical, simple and easy recipes for plant based food is really helpful. It also weirdly makes me feel more normal to see someone else who doesn’t often use a measuring cup and/or spoon when tweaking recipes and winging it 😊 Don’t give up, don’t focus on perfect and don’t forget to be grateful for everything you have right now!
