So I love the taste of mushrooms and will often cook with them. Mushroom pate, mushroom soup, mushroom sauce, etc. But all my life I hated the texture. And Iβve tried every tip on how to cook them and still just dislike.
Until I started cooking seafood mushrooms? The long stems, almost like noodles, with tiny heads. Mostly found in Asian stores. Similar to the enoki mushrooms that I also love. And it changed everything.
Thatβs when I discovered what I hate is the mushroom cap (texture not taste). But I adore the stem. Now itβs one of my favorite foods.
I think as a vegan in the 90s/ 2000s people pushed the portobello mushroom-as-meat substitute thing hard. And so I was constantly given sliced caps on things. I didnβt know how different the rest of it could be. If the caps are tiny in comparison I donβt notice them as much.
So if anyone else struggles with mushrooms still, maybe try that? π€·ββοΈβ€οΈ

I used to hate mushrooms! I remember eating some when i was younger and they were just black and slimy (clearly overcooked) π now that I'm older I quite enjoy them as long as they're not overcooked!
