When I make 'fried' rice I like to use a 50/50 mixture of rice and riced cauliflower. It's a nice compromise.

"oil can ramp up your calories without you benefiting from it" that's not true. Vitamins, minerals, and macros aren't the only nutrients. Olive oil is incredibly nutritious, diet culture is lying to people and telling them those are empty calories but they absolutely aren't. Every single blue zone has lots of healthy oils in it and olive oil is vegan and affordable in most places (so sorry if it isn't where you are :*( )
Plus, I gotta say I won't get enough fat in a day to be healthy without olive oil because I only have one portion of seeds/nuts a day and I don't often have avocados… fat is as necessary as protein and carbs! But honestly it's not really about the fat it's about all those other health benefits
The 'chicken' noodle soup is amazing! I have made it heaps of times now! Just made the fried rice tonight exept with some fresh veg. The seasoning for hee tofu scrambled egg is a game changer! Wow! So good! Thank you so much!

Made the soup today, was a bit dubious of the dried soy but it was delicious 😋 I think next time I will add chilli as it definitely needed a kick to it, so sricha did the job.
