Thank you for having this episode. As a 12 year vegan, it was nice to see you offering this option. I admit that I would usually forward all the meat recipes and shopping, but I love all the other advice you offer and look forward to every episode.
Recently started watching your videos and enjoy your positivity. I’be been vegan for 15 years, so seeing you try vegan food with an open mind was lovely.
My weekly meals are three bean chilli ( easy, cheap and delicious), lentil shepherd’s pie. Again cheap and easy. Always use puy or French lentils as they hold their shape and texture. Chickpea and veg curry. No meat loaf, gorgeous – so many recipes for this online. And a basic pasta sauce with roasted Mediterranean veg and pasta, which I have with a crusty roll and side salad. It’s always best to steer away from faux meats when giving vegan food to non vegans and it’s cheaper and way more healthy.
It would be great to see you do some vegan baking. Vegan brownies are awesome and vegan sticky toffee pudding. ❤
I will have to try to make collards. I want to make cabbage too but have no idea where to begin. Just unboxed my first insta pot last week! Any tips or vegetarian low cost recipes appreciated! I love anything outside of mushrooms pretty much!
We try to eat plant based most of the time. We like to make bran burgers and freeze them for an easy meal. I can't wait to try the recipe with collard and black eyed peas. We love to make rice bowls topped with favorite veggies, beans and fruit like mango/pineapple. You can go Asian food themed or Mexican food themed.
I love this video so much. Also I love the dedication to this challenge! I will definitely be making these. The minimalist baker makes so many great recipes.
My favorite is the veggie chili with zucchini, yellow squash, corn, carrots, onions, lentils, black & kidney beans, diced tomatoes, tomato sauce and veggie broth. Seasonings boullion cube, Italian, cumin, sea salt, pepper, smoked paprika, red pepper flakes, minced garlic and onion powder. Tip: for dry beans soak in water overnight will soften better as they cook. Cook on low in crockpot 6-7 hours.
You can soak the dried beans overnight and it will cook up much quicker

The reason for the liquid smoke is that it gives it that bacon smoked taste. Liquid smoke is amazing!
Eggplant Ptarmigan is my favorite meatless meal.

Thank you for the inspiration. I like to pop a well cooked sweet potato in the blender with plenty of garlic, several quick splashes of lemon juice, tahini, and enough water to blend it smooth…sweet potato hummus…put that on your brushetta.

I have been so busy with "spring" and so many to-do's I've gotten behind in watching your videos. I just loved this video. Now I have to sit down with my notebook and go through these comments! What a treasure of information and ideas. My daughter eats vegetarian, so I will be trying several of these ideas!

Hi Emmy and Paul! Loved the recipes! My fave matless meal is uhm so many either potato pancakes with either applesauce or a green leafy salad Ital. dressing. Net is you make a yeas dough roll it into baseball size balls let rise then you heat up a pot with boiling water over wich you but a clean cotton dishtowel tighten it on the rim of the pot or the handles the towel shall not touch the boiling water just be over top cuz you lay 3 yeastballs on the towel and let them cook by the steam they be soft as a cloud you serve a blueberry sauce over them (just thicken some canned blueberries or make a sauce from fresh ones with water sugar and then thicken with a little cornstarch. Those were my favorites as a child and still are. Most simple is good pasta, good olive oil and fresh garlic and a lot of it just slightly heated in the oil for a short time use the oil/garlic sauce over the fresh pasta…serve with any lettuce. Super cheap and so delicious God bless

As a vegan for the last 5 years, I appreciate and thank you for sharing some plant-based meals.
You reminded me of how I was when I first started using the instant pot. I was so scared I would blow the house up. I feel like a pro now after watching you learning to use it. It is so simple and I love it. I use it almost every day. My favorite or easiest meatless meal is simple taking corn on the cob and wrapping it in foil with whatever seasonings you like, then we take some potatoes and chop those up and put them in foil and add whatever seasonings we want, do the same with onion, garlic, zucchini, brussel sprouts, the ideas are endless really. Any fresh veggie that you can think of, you can wrap in foil and add your favorite seasonings and put it on the grill and cook it as if you are cooking a steak. The last time that I did it, I chopped up some apples and added some cinnamon and brown sugar and that was a very nice dish to go with the rest. In the end you never know that you don't have a meat serving with it all. I like to make a macaroni salad or baked beans with it sometimes. We usually have leftovers because it is just my husband and I as well. So we really like doing this and we use the leftovers threw out the week for different things. Keeping it simple when it comes to meals without meat has been the easiest way to go for us. Our health has greatly improved and we save a lot of money on our grocery bill too.

This isn't vegan but our favorite meatless meal is poor man's lasagna. 1 pound of cooked elbow macaroni and any cheese you have on hand, and all the tomatoes overflowing from the garden . In your baking dish layer alternatively, tomatoes, macaroni, cheese…get to the last layer then take buttered breadcrumbs on topand bake at °350 till bubbly. you can add spices if you want, you can salt and pepper the tomatoes before you start. It's better the next day but delicious on day one. This freezes wwll too.
my meatless meals are mostly when im only feeding myself i fill my steamer basket with whatever i have(broccoli, green beans, brussel sprouts etc,) then top with parm, or I saute veg or if i have rice I make a fried rice. meals don't really all have to have the standard "meat, veg, carb

Oh! So, some of my favourite vegan foods to make are "nacho cheese sauce" made with hummus and nutritional yeast and lentil loaf, which can also be lentil burgers, lentil "meat"balls, etc.
Yes!! Thank you so much for this video! As you know, I am vegan. Eating a plant based diet is, in general, much much cheaper than an omnivorous or even vegetarian diet. Not to mention being better for you, the planet and all the animals!
Ooh…those collards and beans looked especially good. I’ll def have to try that recipe! I make a delicious mushroom barley soup that is vegan if you use vegetable broth. It is out of this world good and great w/ some crusty bread. I use a variety of mushrooms too and it has a “meaty” flavor w/ no meat whatsoever. Def the umami from the mushrooms. I am keen to try more vegan and vegetarian meals myself especially w/ the costs of meat and to reduce my consumption of meat for environmental and health reasons. I’m not one who will go totally vegetarian or vegan…at least at this point, but I do want to incorporate more of those dishes into my meal plans for sure.

You guys rocked this challenge. Well done! Our favorite vegan meals are chili (using beans instead of meat) and stir fry (using tofu in place of meat). So healthy AND economical. Win win! 😁
