I had no idea of the existence of that Scotch bonnet pepper, so I looked it up and it seems like the rest of Central America calls it Panamanian pepper. This struck me as odd because I live in Panama and never heard of it, but then I kept reading and it turns out the Panamanian pepper is what we here call "aji chombo" all along. So I'm a bit surprised that I couldn't recognize the most popular and easy to get pepper of my country.

I prepared this curry and it is definitely one that I will keep in my "Often" File. I had to make some tweaks because I did not have enough lentils on hand as I thought so I added some black-eyed peas with the lentils. I also added kale which is no biggie, just a preference. And did not use the scotch bonnet due to preparing for 89 year old mother. I will add the pepper the next time i prepare the curry for myself only. This is so, so flavorful without the basic salt and black pepper. Thanks for sharing this recipe. It can be prepared as a special dish for company ( I have friend who will love it and think I ordered carry-out); or it can be a special dish just for me anytime.
